Griddle temperature for Pancakes from scratch? they come out crispy and undercooked?
Or maybe because I'm using skim milk instead of whole milk? the tops and bottoms are crispy and white and the inside is undercooked
But what is the temperature i should set my griddle? I've been using 300
i use a basic recipe, flour, milk, egg, salt, oil, baking soda and powder
The griddle or frying pan and reduced heat are absolutely critical to the cooking process. Anyone who knows how to make pancakes knows that too much heat and not enough patience will kill a pancake every time! Turn the burner or griddle to between LOW and MEDIUM heat, preferrably closer to the LOW side. Pancakes should bake slowly, in 3-5 minutes, not fry quickly. If the pancakes start cooking too fast, turn the heat down to LOW!
Lastly, use a laddle to pour your pancakes onto the griddle, swirling in a circular motion as you pour so that the pancake forms a nice round shape as it starts to cook.
A Perfect Pancakes Recipe
3 cups plus 2 tablespoons cake flour
1/2 teaspoon salt
3 tablespoons baking powder
2 tablespoons sugar
2 cups milk or buttermilk
2 large eggs
3 teaspoons vanilla
4 tablespoons butter (melted)
Lots of butter and syrup
Mix together dry ingredients in a large bowl. In a separate bowl mix together milk, eggs, and vanilla. Add wet ingredients to dry ingredients, stirring very gently until just combined. Melt butter in the microwave and add it to the batter, stirring gently to combine. Cook on a greased skillet or griddle over medium-low heat until golden brown. Serve with butter and syrup.
