I always buy the best steak from the butcher; get my griddle pan red hot, cook rare but it still isn't good ??
Doesn't seem to matter what I do, I buy best sirloin, rump, ribeye from reputable butcher, been hung so fat is deep cream colour, get pan hot, cook for about 2 mins on each side but still it seems tough and sinewy - HELP PLEASE?
Only fillet will be completely without any sinew / connective tissue...but it is NOT the best cut for flavour.
Rump tastes excellent - but does require a lengthy cooking time and does not make great steaks.
A GOOD quality 21 to 28 day matured Scotch (Aberdeen Angus) sirloin - none of the imported Brazillian / Argentinian stuff done as follows will be very good.
Steak at room temp, Cast Iron griddle HOT - NO oil on griddle or meat - it is NOT required. Season BOTH sides of meat with sea salt & fresh cracked black pepper. (Old wives tale about drawing out moisture). Place steak on griddle and DO NOT MOVE IT (2-3 minutes) until you turn it over ONCE for another 2 minutes. Place on plate & cover to rest meat for 2-3 minutes then serve - DO NOT 'rest' in an oven or it will dry out. Steak should be warm, not hot to improve the flavour & texture. The above will give a medium/rare finish.
The better the cut - the shorter the cooking time.
